A super comfort food for your weeknights. Chicken Sausage Aglio Olio (Spaghetti with olive oil, garlic, red chilli flakes and bite-size pieces of Chicken Sausages) is extremely easy to make yet each bite is so delightful.
Here’s the step by step recipe for you all;
Preparation Time 8-10 minutes
Cooking Time 15-20 minutes

Ingredients
- Chicken Sausages 5 (diagonally cut into bite-size pieces)
- Spaghetti (Pasta made in solid strings) 500 grams
- Garlic 5-7 cloves minced
- Olive Oil (preferably extra virgin) 3-4 tablespoons
- Red Chilli Flakes 1 teaspoon (add more to your taste)
- Oregano 1 teaspoon (optional)
- Parmesan Cheese or your choice of cheese Grated (optional)
- Salt to taste
Method
Step 1
Bring a large pan/pot of cold water to a boil over high heat for 5-7 minutes. Then add salt generously. Add the spaghetti (pasta) and cook, stirring occasionally until it’s tender but not mushy.
Step 2
While the spaghetti (pasta) cooks, combine the garlic, olive oil (2 tablespoons), chicken sausages, salt to taste, and red chilli flakes in a large pan over low heat, stirring occasionally, until the garlic softens and chicken sausages turns golden brown for about 2-3 minutes.
Step 3
Drain the spaghetti in a colander set in the sink. Combine the spaghetti and chicken sausage mixture in a pan (you can use the same pan in which you fried the chicken sausages). Mix well. Adjust seasoning, to taste. Add 1-2 tablespoons of olive oil (preferably extra virgin) to the spaghetti and give a stir. Transfer to a large serving bowl or divide amongst 4 dishes. Serve topped with grated Parmesan cheese and oregano (optional) and relish your Chicken Sausage Aglio Olio.
