Quesadillas from the versatile Mexican Tortillas (thin flat breads made from wheat flour). Chicken and bell peppers are a succulent delight when cooked with melted cheese. This is a great recipe for parties.

Ingredients
- Tortillas (thin flat breads made from wheat flour) 8
- Chicken Breast 3 (600 grams) – Diced to 1/2 inch pieces
- Shredded Mozzarella Cheese 2 cups
- Bell Peppers/Capsicums (preferably different colours) 2 diced
- Onion 1 large diced
- Carrot 1 diced
- Chopped Garlic 5-7 cloves
- Chopped Ginger 1 inch
- Chopped Green Chillies 2
- Soy Sauce 1 tablespoon
- Chilli Sauce 1/4 cup (optional)
- Olive Oil 3 tablespoons for stuffing and 2 tablespoons for cooking quesadillas
- Black Pepper Powder 1 teaspoon
- Salt to taste
Method
Step 1
Heat a pan with 1 tablespoon of olive oil. Add chopped ginger and garlic. Sauté for 1 minute. Then add diced onions and sauté for 2 minutes. Add chopped carrot and continue to sauté for 3-4 minutes. Add the diced capsicums (bell peppers), chopped chillies, salt and black pepper powder. Sauté all the veggies for 4-5 minutes.
Step 2
Add the chicken pieces and cook on medium flame until soft (7-10 minutes). Add soy sauce and stir once. Switch-off the flame. Keep this mixture aside.
Step 3
Lay 1 tortilla on a flat surface and sprinkle with 1/4 cup shredded cheese. Put 1/4 chicken and vegetable mixture on top of cheese, then top with a few drops of chilli sauce (optional) and an additional 1/4 cup cheese. Top with another tortilla.
Step 4
Preheat a griddle (tava) for 1-2 minutes. Put 1/2 tablespoon of olive oil in the center. Heat it for 1 minute. Now carefully place the quesadilla on it and cook for 2-3 minutes on one side.
Step 5
Using a large spatula, gently flip quesadilla and cook for an additional 2-3 minutes until lightly browned and cheese is melted. Repeat with the remaining quesadillas.
Step 6
Take it out, slice the quesadilla into quarters and serve hot with salsa, sour cream or chilli sauce.
