Roasting can be so much fun. You can try with seafood, corn, chicken, lamb, paneer (cottage cheese) and the list goes on.  Tandoori Prawns are marinated in lemon juice, yogurt and spices, then grilled or broiled. Plan ahead. This recipe needs to be marinated for at least 6 hours or overnight.

The very tasty and nutritious black chickpeas in the form of Ghugni (saucy preparation of black chickpeas) is here this weekend. It is very popular in almost all Indian homes. A must during Navratri Pooja (ritual) when it is cooked without onion and garlic. Quiche - Indian Curry Shack

Pita or Pitta is a soft and slightly leavened flatbread baked from wheat flour. It is used in many Mediterranean and Middle  Eastern cuisines. Pita can be used to scoop sauces or dips such ashummus and taramosalata, or to wrap kebabs or falafel like sandwiches. It can also be cut and baked into crispy pita chips. Traditionally, the Pita Bread is baked. But, here’s the very easy recipe of this totally yummy Pita Bread cooked on a non-stick tava (griddle). Today what I have is one of my favourite recipes ‘Paneer Paratha’ which is a variety of Indian Flat Bread made with whole wheat flour and stuffed with Paneer (Cottage Cheese). It goes wonderfully with natural yogurt, salted butter or any kind of pickle. After making the parathas, I cut them into strips and relished each strip even more. You can serve these for breakfast, main-course or even in lunch-boxes.
