Hi Guys, hope you all had a fantastic weekend. Well, we were travelling over the weekend and right now I am writing from our house in Mumbai. Yes, we are in India for a short break 🙂 Bringing your way a gourmet dish Chicken stuffed with Feta Cheese. Stuffing the chicken breasts with Feta Cheese gives a lovely flavour to Chicken and keeps them moist during cooking. We absolutely love this dish and relish it till the last bite. 🙂
Here’s the recipe for you;

- Chicken Breasts 2
- Natural Yogurt 1 cup
- Red Chilli Powder 2 teaspoons
- Lemon Juice 2 tablespoons
- Ginger Paste 2 tablespoons
- Garlic Paste 1 tablespoons
- Garam Masala Powder 1 teaspoon
- Mustard Oil (alternative, Olive Oil) 2 tablespoon
- Olive Oil 2-3 tablespoons
- Tandoori Masala (if available) 2 teaspoons
- Feta Cheese 1/2 cup crumbled
- Oregano 1 teaspoon
- Spring Onion 1/4 cup
- Black Pepper Powder 1 teaspoon
- Salt to taste
Method
Step 1
Make a pocket in chicken breasts: Make a cut in each chicken breast, starting from the thicker side of the breast with a knife. Carefully create a deep pocket. Ensure that the other side of the chicken breast is intact. Keep aside.
Step 2
First marinade: Apply salt, one teaspoon red chilli powder, half teaspoon garam masala, one tablespoon ginger paste, half tablespoon garlic paste and two tablespoons lemon juice over the chicken breasts and mix well. Set aside for half an hour.
Step 3
Second marinade: Tie up yogurt in a piece of muslin or thin kerchief-size cloth and hang over a bowl for at least 30 minutes. After 30 minutes, drain out the excess water and remove the thick yogurt into a bowl. Add the remaining red chilli powder, salt, ginger paste, garlic paste, garam masala powder, tandoori masala (if available) and two tablespoons of mustard oil (or olive oil). Whisk until well-mixed. A nice orangish colour marinade is ready.
Step 4
Then, rub this mixture well over the chicken breasts one by one. Ensure the mixture goes inside the pocket on each chicken breast. Marinate for 4-5 hours in a refrigerator. For a quicky, even an hour’s marination is fine.
Step 5
Remove the chicken from the refrigerator. Set aside for fifteen minutes before cooking. During this time, in a small bowl, combine Feta Cheese, Oregano and Spring Onions. Keep aside.
Step 6
Stuff Chicken pockets with the feta mixture, dividing evenly. Then carefully, season both sides of chicken with salt and black pepper powder generously.
Step 7
Preheat the griddle (tava) for 1-2 minutes. Put olive oil in the center. Heat it for 1 minute. Now lay both the Chicken Breasts. Cook for 5-7 minutes on both the sides or till the chicken is well cooked and browned. Be careful and gentle while turning the chicken as the feta cheese might come out. Precision is very important while cooking a gourmet dish.
Step 8
Take them out and either as is or cut into three pieces and serve hot. Optionally you can drizzle some extra virgin olive oil or melted salted butter on top. It tastes absolutely amazing with this addition. You can also have some stir-fried vegetables on the side.
