Egg White and Spinach Omelette

Egg White & Spinach Omelette - Indian Curry ShackTime for a dose of health. It can’t get better than protein, dietary fibre, vitamins, calcium, iron…. and more in a single dish. A quick recipe for breakfast, main-course or snack. Comfort food was never so nutritious. 🙂

Here’s the recipe for you all;

Ingredients                                                                  

  • Eggs  3 (Egg-whites)
  • Cooking Oil  1 tablespoons
  • Chopped Onion  1 small
  • Spinach  a handful fresh (alternatively, thawed frozen spinach)
  • Chopped Green Chilli  1 small
  • Ground Black Pepper  1/2 teaspoon
  • Salt  to taste

Method

Step 1
In a bowl, beat the egg-whites well with salt, ground black pepper and chopped green chilli. Keep aside.

Step 2
Egg White & Spinach Omelette - Collage - Indian Curry ShackHeat oil in a non-stick frying pan/griddle. Put onion and sauté for a minute. Add spinach and a pinch of salt and mix well. Sauté for 2-3 minutes. Add the egg-white now and spread evenly at the edges to form a nice circle. Cook on medium flame. After 1-1.5 minutes, lightly lift up sides and turn the omelette carefully to other side. If the omelette is still soft, give it 15-20 seconds more before turning. Once the omelette is golden brown and shiny from both the sides transfer it to a plate and enjoy with bread toast.
