Chocolate Chip Oat Cookies (Day 4) – 7 Days of Christmas

Chocolate Chip Oat Cookies - Indian Curry Shack Divine is the word for these cookies. Start your day with Chocolate Chip Oat Cookies with a cup of Tea or Coffee. My better half savoured these with his black coffee. Kids will adore these with a glass of milk or just as is. Excellent to pack these in your Christmas gift baskets too.

  • Oats  3/4 cup
  • Self-raising Flour or Plain Flour (Maida)  1 1/4 cup
  • Salted Butter  Slightly less than half cup
  • Brown Sugar  1 cup
  • Egg  1 (at room temperature)
  • Baking Soda  1/2 teaspoon
  • Salt  a pinch
  • Vanilla Essence  1/2 teaspoon
  • Dark Chocolate Chips (small)  1/2 cup (for batter) + 1/2 cup (to put on warm cookies)

In the bowl of your electric mixer or hand mixer, whisk together the butter and brown sugar until coarsely creamy (1 minute). Then add vanila essence and egg and beat until light and fluffy. Now with the mixer on low, add the flour, baking soda and salt and beat until combined. Add the oats and 1/2 cup chocolate chips and beat until well incorporated.

Put the mix in an air tight container or wrap in a cling film and leave to rest in a refrigerator for 1 – 1.5 hours. After bringing the mix out from the refrigerator let it rest at room temperature for around 30 minutes before baking.

Keep a baking tray ready with baking/parchment sheet on it. Drop spoonfuls of dough (I used the ice cream scoop) on your palm and make a nice ball and place onto the prepared baking/parchment sheet. Continue this step for the rest of the dough. (I have a small baking tray so I placed 4 balls at a time). The dough spreads while baking so put the balls 1 – 1.5 inch apart from one another. Preheat the oven. Bake at 180 degrees C/350 degrees F for 12-13 minutes.

Bring the cookies out. Let them rest on the baking tray for 5 minutes before transferring on a wired rack. While they are resting and still warm add the remaining chocolate chips on them by pressing them on the cookies.Chocolate Chip Oat Cookies - with Chocolate Chips - Indian Curry Shack

After they have rested for 15-20 minutes, transfer them to an air tight container. They will stay fresh easily for 5-7 days but trust me who will wait for 5-7 days to finish them. Mine got polished off in a day. 🙂Chocolate Chip Oat Cookies (Stacked) - Indian Curry Shack
