Day 5 of 7 Days of Christmas comes with Walnut and Chocolate Chip Muffin. Extremely easy to make and a super hit for anyΒ party, breakfast or high tea.

Self-raising Flour or Plain Flour (Maida) Β 3/4 cup
- Banana Β 1
- Cooking Oil Β 1/4 cup
- White GranulatedΒ Sugar Β 1/4 cup
- Egg Β 1 (at room temperature)
- Baking Soda Β 1/4 teaspoon
- Baking Powder Β 1/2 teaspoon
- Salt Β a pinch
- Cinnamon Powder Β 1/4 teaspoon (Optional)
- Vanilla Essence Β 1/2 teaspoon
- Walnuts Β 1/4 cup (diced into small pieces)
- Dark Chocolate Chips (small) Β 1/4 cup
Method
Step 1
Line a muffin tin/tray with muffin liners and set aside.
Step 2
In a small bowl, add the walnut pieces and chocolate chips and 2-3 tablespoons of flour and mix until all the walnut pieces and chocolate chips are coated in the flour. Set aside.
Step 3
In a large bowl, add the banana and mash it. Add cooking oil and vanilla essence and mix it. Now add the eggΒ and sugar and mix until well mixed. Add the flour, baking powder, baking soda, cinnamon powder (optional) and salt and whisk until all combined.
Step 4
Add the walnut, chocolate chip and flour mixture and whisk until well incorporated.
Step 5
Preheat the oven. Drop theΒ batterΒ with a spoon orΒ ice cream scoopΒ on the muffin linersΒ in the tin/tray until 3/4th full.Β Bake at 200 degrees C/400 degrees FΒ for 13-15 minutes.
Step 6
Bring the muffinsΒ out. Let them rest on theΒ muffin tin/tray for 10-15 minutes before serving.
