Cocktail Sticks (Mozzarella and Cherry Tomatoes on Spaghetti Sticks)

Cocktail Sticks - Indian Curry ShackWishing A Very Happy Singapore 50th National Day To All! Get together and celebrate with these absolutely flavourful Cocktail Sticks (Mozzarella Cheese and Cherry Tomatoes on Fried Spaghetti). The freshest cherry tomato and soft mozzarella cheese when combined with fried spaghetti gives a wonderful burst of flavours and crunch in your mouth. Not to forget that the fried spaghetti also makes up for your toothpick or skewer that you would use otherwise for this kind of dish. These goes amazingly well with Cocktails/Mocktails. Do make extra as these will get over in no time. 🙂

Here’s the recipe for you all;

Ingredients                                                                  

For the sticks:

  • Cherry Tomatoes  15 (cut into halves)
  • Mozzarella Cheese  15 medium sized cubes
  • Spaghetti (Pasta made in solid sticks) 15 sticks
  • Cooking Oil  2 tablespoons for frying the spaghetti sticks

For the dressing:

  • Extra Virgin Olive Oil  1 tablespoon
  • Lemon Juice and Lemon Zest  1/2 lemon
  • Balsamic Vinegar  1/2 teaspoon
  • Ground Black Pepper  1/2 teaspoon
  • Salt  to taste

Method

Step 1
For the Cocktail Sticks: Break each spaghetti stick into two. Heat oil in a pan and fry the spaghettis till golden (about a minute). Transfer to a plate with kitchen tissue to absorb excess oil. Get the halved tomatoes and mozzarella cubes on a plate. With a toothpick or skewer make holes in the center of both tomatoes and mozzarella cubes. Then insert a fried spaghetti in the tomato first and then cheese cube. (Using a toothpick or skewer to make holes in tomato and mozzarella makes it easier to insert the fried spaghetti stick and prevents it from breaking during the process). Repeat the same step for the remaining tomatoes, cheese and spaghetti sticks and stack on a serving plate.Cocktail Sticks-SG National Day 9th Aug - Indian Curry ShackStep 2
For the Dressing: In a small bowl take lemon juice, lemon zest, extra virgin olive oil and balsamic vinegar. Mix well until all combined and form a thick dressing (you can use a fork to mix – all the ingredients should be together – oil, lemon juice and vinegar should not look separate from each other). Season with salt and pepper. Mix well. The dressing for your cocktail sticks is ready.
