Bruschetta is a starter dish from Italy consisting of grilled/baked bread rubbed with garlic and topped with olive oil and salt. Variations may include different toppings like chopped tomatoes, onions, beans, cheese, basil, etc.
I am sharing my homemade version with you all today. It’s inception in my kitchen was completely co-incidental. Better half got Buffalo Mozzarella Cheese and we planned to have tomato and buffalo mozzarella salad. Soon enough Bruschetta came in my mind and I used the wholemeal (brown) bread already available at home. Made homemade garlic butter, rubbed on the bread pieces, grilled them, added toppings and Voilà!
Below are the steps for these flavorsome beauties;

Baking Time 7-10 minutes; Assembling Time 5 mins

Ingredients
- Wholemeal (Brown) Bread Slices 12 (or more) – cut into half
- Buffalo Mozzarella Cheese 1 1/2 cups or 250 grams
- Tomatoes 2 diced
- Ground Black Pepper sprinkle to taste
- Salt sprinkle to taste
- Oregano (Dry) sprinkle to taste
- Chilli Flakes sprinkle to taste
- Green Chilli Diced (optional)
- Garlic 6-7 cut in thin flakes (for garlic butter)
- Salted Butter 3-4 tablespoons (for garlic butter)
Method
Step 1
For Garlic Butter – Heat butter on low flame in a pan. After half a minute add garlic and continue to heat for 2-3 minutes on low flame.
Step 2
Pre-heat the oven to 200 degree C/390 degree F.
Step 3
Take bread slices and rub the garlic butter on them. Arrange the slices on a baking tray and bake for 7-10 minutes or until crispy.
Step 4
Carefully take the tray out from the oven. Transfer the bread slices to a plate and add the toppings (tomato, buffalo mozzarella cheese and green chilli – optional). Sprinkle a little salt, oregano and chilli flakes and serve hot and crispy.
